How & What to Cook with Deer Meat?

Deer meat is surprisingly similar to chicken, but when it gets cooked, it turns into a denser, more robust meat. This creamy, richly sweet risotto made with venison makes an ideal mid-winter meal.

Although deer are common throughout the US and are a valuable part of the ecosystem, they are also hunted for their meat. This means there aren’t many places that sell deer meat–less because they’re so plentiful but mostly because they’re expensive.

Best possible ways to cook venison

Firstly, you should know that deer meat doesn’t taste all that great raw. You’ll need to cook it thoroughly before it has any chance of tasting good. Just like beef, deer has a very strong flavour and needs to be cooked for a long time. The ideal way to cook venison is to braize it or stew it for at least four hours.(the longer the better). Because the meat has a mild taste, you can use a variety of sauces and ingredients.

A common ingredient in venison recipes is game stock, which can be made by simmering the bones for a long time. If you don’t have any or don’t want to make it, beef stock will work just fine. The best way to cook with deer meat is by slow-cooking it with aromatic vegetables and herbs. This will bring out the natural flavours.

There are several ways to use it! For starters, you can make venison stew, which is cooked slowly in red wine with celery and carrots until the meat is tender and falls off the bone.

What cuts you should use

cut meat

Butchers sell most cuts of venison, but I usually find the leg cut into steaks or chops. If you don’t want to mess around with a boneless cut, you can get the entire leg or the loin or neck. You can also buy the shoulder, which is great for stews and soups.

Where to buy venison?

Depending on where you live in the US, it’s usually whether deer are common in your area that decides whether you’ll be able to hunt them or buy them. For example, we live in a town full of hunters and therefore have venison at practically every supermarket butcher counter. It’s possible to order venison online as well, if you’re unable to find it in your local shop.

You might be able to buy it from a supermarket if you look for packages with a minimum amount of additives. Wrap leftovers in cling film to prevent drying out, and store them in the refrigerator. It will keep for up to two weeks.
